Blueberry muffins
need a little pick me up in the morning? here's a simple blueberry muffin recipe for y 'all. It's jam-packed with blueberries and contains only 1/4 cup of sugar in the whole recipe. the dough is not very sweet but the blueberries make it oh so juicy and flavourful. as if it didn't need more plus sides, this recipe takes a whopping 5 minutes to get ready and 15 minutes to bake. twenty minutes and you'll be all set for your week's breakfasts. ingredients:
- 2 cups flour
- 1/4 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup sour cream
- 2 tablespoons melted butter
- 2 eggs
- 1 cup blueberries
- preheat your oven to 400f
- line a muffin tin with paper liners (12)
- in a bowl, combine the flour, sugar, baking powder, baking soda and salt. put aside.
- in a separate bowl, whisk together the sour cream, butter, milk and eggs.
- mix the egg mixture into the flour mixture.
- fold-in the blueberries.
- transfer the mixture into the prepared liners and bake for 18-20 minutes or until they spring back when you push on their muffin-top ;)
- transfer the muffins to a cooling rack for 10-15 minutes
- enjoy !
