peanut butter sandwich cookie
here's the recipe for our chewy peanut-butter sandwich cookies. these cookies get better by the hour. the more you let the filling sit into the cookies, the chewier they will be. A glass of milk and your favourite tv show and you'll be set for a wonderfully cozy evening. here's the recipe.
cookie ingredients:
- 1-1/4 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter
- 1 cup sugar
- 1 teaspoon molasses
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup peanut butter
filling:
- 3 tablespoons peanut butter
- 1-1/4 cups powdered sugar
- 1-3 tablespoons milk
cookie instructions:
- preheat the oven at 375f.
- whisk together the flour, baking soda and salt.
- mix together the butter, sugar and molasses.
- mix-in the egg, vanilla extract and peanut butter.
- mix the dry mixture into the wet mixture.
- roll tablespoons of dough into balls and using a fork, flatten the dough making a crosshatch design.
- bake for 10 minutes until the edges are golden.
- let the cookies cool-off before assembling.
filling instructions:
- whisk together the peanut-butter and powdered sugar.
- add-in the milk and whisk until you have a creamy consistency, adding the milk one tablespoon at a time until you get the desired consistency.
- lather some filling on one cookie and sandwich another cookie onto it. repeat.
- enjoy!
