peanut butter sandwich cookie



 here's the recipe for our chewy peanut-butter sandwich cookies. these cookies get better by the hour. the more you let the filling sit into the cookies, the chewier they will be. A glass of milk and your favourite tv show and you'll be set for a wonderfully cozy evening. here's the recipe.

cookie ingredients:

  1. 1-1/4 cups flour
  2. 1/2 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1/2 cup unsalted butter
  5. 1 cup sugar
  6. 1 teaspoon molasses
  7. 1 egg
  8. 1 teaspoon vanilla extract
  9. 1 cup peanut butter

filling:

  1. 3 tablespoons peanut butter
  2. 1-1/4 cups powdered sugar
  3. 1-3 tablespoons milk

cookie instructions:

  • preheat the oven at 375f.
  • whisk together the flour, baking soda and salt.
  • mix together the butter, sugar and molasses.
  • mix-in the egg, vanilla extract and peanut butter.
  • mix the dry mixture into the wet mixture.
  • roll tablespoons of dough into balls and using a fork, flatten the dough making a crosshatch design.
  • bake for 10 minutes until the edges are golden.
  • let the cookies cool-off before assembling.

filling instructions:

  • whisk together the peanut-butter and powdered sugar.
  • add-in the milk and whisk until you have a creamy consistency, adding the milk one tablespoon at a time until you get the desired consistency.
  • lather some filling on one cookie and sandwich another cookie onto it. repeat.
  • enjoy!
