banana chocolate chip cookies

this banana chocolate chip cookie recipe is egg free and I like to believe it is slightly healthier than regular chocolate chip cookies because it contains two bananas. Unfortunately, I'm pretty sure it has the same amount of calories. This recipe can easily be veganized by using vegan butter  (margarine works too) and chocolate chips. The Banana taste is pretty subtle and it complements the taste of the chocolate wonderfully. If you are a fan of the top, caramelized part of  banana bread, (Don't lie, I know you are !!!) you are going to love these cookies. try them, you will not regret it !

the ingredients are very simple and very few. I like using molasses instead of brown sugar. That way, I don't have to worry about not having brown sugar in my kitchen. If you do have brown sugar, go ahead and use it. use one cup of regular sugar and one cup of brown sugar and omit the molasses. 

ingredients:

  1. 3 cups flour
  2. 1 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1/2 teaspoon cinnamon
  5. 2 cups sugar
  6. 1 cup butter
  7. 1 tablespoon molasses
  8. 2 medium-sized bananas, mashed
  9. 2 teaspoon vanilla
  10. 1 cup chocolate chips

instructions:

  1. preheat the oven to 375f
  2. mix together the first 4 ingredients and set aside.
  3. beat together the sugar, butter and molasses until fluffy and lighter in colour.
  4. mix-in the bananas and vanilla extract until combined.
  5. mix-in the dry ingredients into the wet ingredients.
  6. fold-in the chocolate chips.
  7. drop tablespoonfuls of batter onto a lined or greased baking sheet
  8. bake for 10-12 minutes until the edges start to take-on a golden colour. 
  9. let cool and enjoy!

  • makes about 3 dozen cookies.
  • keeps for 3-5 days.

substitutes:

  1.  the two bananas can be replaced by two eggs. omit 1/2cup of flour if you don't use the bananas.
  2. you can replace the molasses and 1 cup of sugar for 1 cup of brown sugar.
