Caramelized banana bread

If you have old bananas laying around and a regular ol’ banana bread seems kind of boring, I got just the recipe you need!
This recipe is a bit more cheeky and calorie dense than a regular banana bread but it’s oh so worth it!
Doing a few tests, I realized that to have a perfectly caramelized top, I couldn’t bake it for more than 30 minutes. So I had to make it a bit thinner. But in my opinion, this is a plus since you won’t have to wait a whopping 50-60 minutes before indulging . The parchment paper is soooo important in this recipe. If you don’t line your pan, your caramel with 100% stick to the bottom of the pan and you will be very dissapointed! I know I was.

Ingredients:

  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 egg
  • 2 medium bananas, mashed.
  • 1/2 cup brown sugar.
  • 1 teaspoon vanilla extract.

For the caramelized part:

  • 1 banana sliced in the middle (like a banana split.)
  • 1/4 cup brown sugar
  • 2tbsp butter
Instructions:

  • Preheat the oven to 350f
  • Line a bread pan with parchment paper.
  • Mix together the first 5 ingredients and set aside.
  • In a big bowl, cream together the butter and brown sugar.
  • Add-in the egg and vanilla extract.
  • Once it’s well combined, add the flour mixture and the mashed bananas and mix until combined.
  • Mix together your brown sugar and butter.
  • Lather the sugar mixture  at the bottom of your pan. Place the banana slices on top and add the mixture on top of your bananas.
  • Bake for 30 minutes or until a knife poked in the middle comes out clean.
  • Remove from the pan and peel away the parchment paper away to reveal your beauty.
  • Enjoy!
