fresh mango salsa



how about a little tropical recipe to beat the winter blues. this salsa is refreshing, just sweet enough and will make any meal go from boring to "are we in Mexico?"
This salsa can be eaten with corn chips or paired with any seared meat. give it a try, you will not regret it! the ingredients are very simple, straightforward and can be found in practically any grocery store.
For best results, I recommend using the most ripe, sweet mango you can find. When it comes to jalapenos, sometimes you will get a very spicy batch and other times you'll be wondering if you bought the right stuff. so, go with your preference. if you like it spicier, add more. Vice versa. If you're on  the anti-cilantro team, you can totally omit it. 

 I love using red onions in fresh salads, they're just a little more spicy and flavourful than their sister the white onion and the touch of colour they add makes this salsa look even more vibrant.
I paired my salsa with salmon and some fluffy coconut rice( recipe coming soon)and it was oh soooo good! this is definitely becoming a staple in my home and I hope it will be in yours too.


ingredients

  • 1 diced mango
  • 1diced red pepper
  • 1-2 chopped jalapenos
  • juice of 1 lime
  • 1 tablespoon cilantro
  • 1 tablespoon olive oil
  • ~1 teaspoon salt (to taste)

instructions

  • in a bowl, mix all the ingredients together and salt to taste.
  • let the salsa sit in the refridgerator for at least an hour.
